Caramels

This weekend I was able to get my Christmas cards mailed, some shopping done, wrapped some gifts, and even made caramels.  I was able to get perfect caramels despite the fact I had no running water and my candy thermometer's battery had died.  I ended up using a meat thermometer which only registered temp up to 228 degrees.  I was pretty nervous I was going to have to start over from scratch, but they ended up being just right.

  3. Thanks! Merry Christmas to you both!! (Don't tell anyone, but I gave up sugar about a year and a half ago. The caramels are gifts. I had my husband test them for me since I wouldn't be able to judge them because I lost my desire for sugar.)

  4. If we were still neighbors you know I would have tested your caramels for you! How come you didn't have running water? I am so glad they turned out.
